French-born cheesemaker Sophie Hauville crafts mouth-watering artisan cheeses and brings new life to a historic Carmel Valley building that sits close to the river and used to house a community gathering spot, Rosie’s Cracker Barrel. There is fresh goat cheese, fromage blanc, a bloomy rind Camembert and aged cheeses infused with coriander and peppercorns. Customers can watch cheese being made through glass windows, while they sip espresso drinks, nibble Ad Astra pastries or shop a curated selection of artisanal food products and gifts.
