Located inside the Santa Cruz outpost of Sante Adairius Rustic Ales, Bookie’s Pizza is owned by fine dining veteran chef Todd Parker and offers “inauthentic” Detroit-style square pies. Each pizza is made using the best seasonal ingredients from local farms, fishermen and foragers. Dough is made with organic flour, naturally leavened for 48 hours, and each pizza comes with its own unique sauce.
