August 11, 2015 – Indomitable restauranteur Bill Lee has a new project up his sleeve. After leaving Rocky Point restaurant earlier this summer, you may recall he started up a summertime shave ice catering business. Now he’s planning a new venture in Carmel Valley called the Pink Shack. It’s named for the tropical paintings by Steve Barton that once adorned the walls at his famed Bahama Billy’s eatery in Carmel. Lee is planning a casual place that reflects the holiday island mood of the paintings.
He’s picked out a village location on Del Fino Place that offers a wide sun-drenched patio where guests can order casual food, sip a glass of wine and enjoy the beautiful Carmel Valley view.
“We envision a popular destination for ‘townies’ to take a drive into the valley…to get killer shave ice, just like they drive to the North Shore of Hawaii,” said Lee.
Pink Shack would offer a simple menu, made with fresh local ingredients. Gourmet burgers, a panini bar and appetizers are also planned. The only catch? Lee still needs to line up investors. He’s hoping to raise $125,000 and promises a great return, plus lots of fun. Interested investors should contact him at billqlee@gmail.com.
