Jeremy Tummel joins The Bear and Star

stillwater-chef-jeremy3-670x670December 20, 2016 – Chef de cuisine Jeremy Tummel of Stillwater Bar and Grill in Pebble Beach is leaving at the end of the year to join John Cox in opening the new farm-to-table restaurant The Bear and Star in Los Olivos.

“It’s a very cool project,” he says. “It’s going to be amazing.” The restaurant will be part of the 800-acre Fess Parker ranch and will serve foods from the ranch in a fusion of California cuisine and Texas-style barbecue—in the heart of the Santa Barbara Wine Country.

For Tummel—who is part Chumash and can trace his family roots back several generations in the area— it’s a homecoming of sortsHe is a graduate of the culinary program at Santa Barbara City College and taught there for three years before helping open the luxurious beachfront Bacara Resort & Spa, which also boasts a 50-acre farm across the road.

“A lot of people say they do the whole farm-to-table, but this is going to be the real thing,” says Tummel, who has been with the Pebble Beach Company for the past six years.

As chef John Cox revealed to EMB last week: “I really like ambitious projects and this has the potential to be one of the top restaurants of this type in the country.” 

The ranch is operated by family of the late 1950s-era TV star best known for portraying Disney’s Davy Crockett and Daniel Boone. It already includes 20 head of Wagyu cattle, a 300-acre vineyard, a brewery and gardens. Plans are underway to add a chicken coop, pig pen and bee hives.

Cox, who is a partner in Carmel’s Cultura Comida y Bebida and a partner in the new Los Olivos venture, plans to split his time between the Carmel restaurant and the new one in Santa Barbara County.
