FLASHbird Debuts at Abbott Square

April 27, 2021 – The team from Alderwood fine dining restaurant in Santa Cruz is softly opening a fried chicken sandwich spot called FLASHbird at Abbott Square Marketplace.

“We want it to be a counterpoint to what we do at Alderwood,” says exec chef Jeffrey Wall, who did all the recipe development and even designed a whimsical website for the business himself. 

Everything on the menu is made from scratch in-house, including the brined and battered chicken—which comes in regular or spicy—and the fluffy potato buns. Chef Wall and his helpers are fermenting their own hot sauce and making other condiments, including spicy honey, barbecue sauce, honey mustard and buttermilk ranch dressing.

Waffle fries, onion tangles, cheesy mac and southern-style coleslaw round out the menu. Fans of Alderwood will notice the restaurant’s popular hen-of-the-woods mushrooms also make an appearance here in the Crispy Fried Hen-Mushroom Sandwich.

“We want it to be fun, approachable and yummy,” says Wall, adding that he designed the menu and the website to reflect his sense of humor.

Price points for this quality of food are quite reasonable and Wall said that’s on purpose. “It was intentional so that anyone, even a young person on an allowance, can eat here multiple times a week.”

FLASHbird will be a great addition to the food and drink lineup at Abbott Square.
