Anthony Vitacca Mixes it Up at the C restaurant + bar

June 29, 2021 – Award-wining mixologist Anthony Vitacca has joined the team at the C restaurant + bar at InterContinental The Clement Monterey hotel on Cannery Row. The wildly creative and hyper local barman— who was a big draw at Montrio Bistro before it closed for remodeling—says he is currently collecting “toys” in order to create a world-class cocktail destination.

“Our goal is to put the word Craft behind the “C” in the restaurant’s name,” he says. Vitacca joins exec chef Matt Bolton, manager Tom Holt and head bartender Luis Salinas at the C restaurant + bar, which reopened on May 26 following a stunning remodel.

The dining room, with its floor-to-ceiling windows and spectacular views of the Monterey Bay, has been thoroughly updated with chic new contemporary lighting, semi-circular banquettes upholstered in ocean blues and comfy chairs. For the moment it is open for breakfast and dinner Wednesday to Sunday, but plans are in the works to expand service and open for lunch soon.

“We are working on procuring all the tools and esoteric spirits needed to elevate the C-Bar cocktail program and Increasing our eclectic craft spirits selection,” says Vitacca. “We have been discussing everything from glassware, clear ice, infusions, smoke, milk punches, playful garnishes, DIY mixes, syrups, bitters, craft sodas and even mundane bar tools such as bitters bottles, double strainers and olive stuffers.”

Hotel GM John Turner and chef Bolton want to make the C restaurant more than just a fantastic guest amenity. “Their quest is to elevate it to local iconic status,” Vitacca adds.

The restaurant was fortunate to be able to bring back Bolton and pastry chef Michelle Lee when it reopened. The menu features locally-sourced California cuisine, including sustainable seafood dishes and expertly-grilled steaks. Vitacca says he is working to create a bar menu that complements the spectacular views and cuisine.

“Chef Bolton’s menu abounds with bold, rich flavors yet is unpretentious. I envision a cocktail menu very much in the same vein—bold, innovative, unpretentious—fun and playful!” he says.
